PAPEDA TYPICAL FOODS MADE FROM SAGO




Sago tree or other name Rumbia, a tree that only has one trunk and is not branched in the inner stem called the pith there is a high carbohydrate so that it can be processed and made one of the staple foods. Some in the regions of Indonesia process it as a typical food like Papeda.

Sago is a staple and is widely known in Sentanu, Abrab, around Lake Sentani, Arso and Maokwari. one of the typical sago preparations is Papeda.  One of the typical foods from the provinces of Maluku and Papua.

Papeda which is still pure has the appearance of a supple white transparent pulp like glue, served with fish species such as cork fish, red snapper, tuna, cake fish, bubara fish however, the food is often served with tuna fish mixed with yellow soup and some other mixes such as vegetables and other side dishes.

For the taste of pure papeda without seasoning when eaten without using a mixture it tastes bland / tasteless but usually it has been seasoned with salt. The way to eat papeda is by gata-gata (made from Sago / Rumbia wood) and the shape is similar to chopsticks. The right and left hands each hold one piece of wood which is then inserted into the papeda and then raised and rotated at the end of the gata until it clots or is rolled up and transferred to the container or plate where we eat.


If you eat papeda, you can choose to chew or swallow immediately because of its soft and chewy texture. But it is still advisable to chew so as not to choke when swallowing.

If you want to make papeda, below is a simple recipe:

1. Prepare 100 grams of sago flour
2. Prepare 1000 cc of water
3. If you want to add a sweet or savory taste add:
       ½ teaspoon salt
       ½ teaspoon sugar

For how to make it:
1. Mix all sago dam powder approximately 300 cc into the container that has been. provided and mix ingredients number 3 at a time.
2. Boil 700 cc of water until boiling.
Mix boiling water to the sago powder that has been mixed before.  Mix until evenly become clear / transparent white.  If it cannot be heated with low heat and stirred until the color becomes clear white / transparent.
 Remove and ready to be serve.  can also be served with fish and vegetable dishes..
